Vegan Coconut Jaggery Fudge Recipe

This Vegan Coconut Jaggery Fudge is a guilt-free treat made with Gurmae coconut jaggery cubes, coconut milk, and shredded coconut. It’s rich, indulgent, and the perfect combination of sweetness and coconut flavor. Ingredients

For the Fudge:

  • 1 cup (240ml) coconut milk (full-fat for creamier texture)
  • 1 ½ cups (150g) shredded unsweetened coconut
  • 30 cubes (150g) – Gurmae coconut jaggery cubes,
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

  • Chopped nuts (e.g., almonds, cashews, pistachios)
  • Dried fruits (e.g., cranberries, raisins)
  • A pinch of ground cardamom or cinnamon for added flavor

Instructions

Step 1: Prepare the Coconut Milk Mixture

  1. Combine Coconut Milk and Gurmae Jaggery: In a saucepan over medium heat, add the coconut milk and coconut jaggery cubes. Stir the mixture constantly until the jaggery dissolves completely into the coconut milk.

Step 2: Cook the Fudge Base

  1. Add Shredded Coconut and Coconut Oil: Once the jaggery is dissolved, add the shredded coconut, coconut oil, vanilla extract, and sea salt to the saucepan. Continue stirring to combine everything.

  2. Simmer: Let the mixture simmer for about 5–7 minutes, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan.

Step 3: Set the Fudge

  1. Transfer to a Pan: Once the mixture thickens, transfer it into a greased or parchment-lined square or rectangular pan (8×8-inch works well).

  2. Press and Flatten: Use a spatula to spread and press the mixture evenly in the pan.

Step 4: Add Optional Toppings

  1. Optional Add-ins: If desired, sprinkle chopped nuts, dried fruits, or a pinch of cardamom/cinnamon over the fudge mixture. Press lightly into the top.

Step 5: Cool and Cut

  1. Cool: Allow the fudge to cool at room temperature for about 15–20 minutes before transferring it to the fridge to firm up for at least 2–3 hours.
  2. Cut into Squares: Once set, cut the fudge into small squares or rectangles.
