Coconut Jaggery Fruitcake Recipe

Ingredients

For the Fruitcake:

  • 1 ½ cups (180g) mixed dried fruits (raisins, cranberries, apricots, or dates)
  • 1 cup (120g) unsweetened shredded coconut
  • 1 cup (240ml) orange juice or fruit juice
  • 30 cubes (150g) – Gurmae’s instantly dissolvable coconut jaggery cubes 
  • 1 ½ cups (180g) whole wheat flour or all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ½ cup (120g) chopped nuts (cashews, almonds, walnuts)
  • ¼ cup (60ml) coconut oil or melted butter
  • 2 tbsp coconut milk (optional for added moisture)
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 tbsp rum or brandy (optional, for extra flavor)

Instructions

Step 1: Soak the Dried Fruits

  1. Soak the Dried Fruits: In a bowl, soak the dried fruits and shredded coconut in orange juice (or any fruit juice of your choice) for about 1 hour, allowing them to absorb the liquid and soften.

Step 2: Prepare the Cake Batter

  • Preheat the Oven: Preheat your oven to 180°C (350°F) and grease or line a loaf pan with parchment paper.
  • Mix the Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and a pinch of salt.
  • Combine Wet Ingredients: In another bowl, combine the Instantly Dissolvable Gurmae’s coconut jaggery cubes, melted coconut oil (or butter), vanilla extract, and coconut milk (if using). 

Step 3: Mix the Batter

  • Add the Dried Fruits: Add the soaked dried fruits and coconut mixture to the wet ingredients and stir.

  • Bake: Place the pan in the preheated oven and bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. If the cake is browning too quickly on top, cover it with aluminum foil and continue baking.

Step 5: Cool and Serve

  1. Cool: Allow the fruitcake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Serve: Once cooled, slice and serve the fruitcake. It can be enjoyed on its own or paired with a cup of tea or coffee.
